
Dark chocolate pecans are wonderful in so many configurations: in fudge and brownies, clusters and bark, and in bars. I enjoy all kinds of nuts. And, perhaps because I grew up with family all over the American South, pecans have always been my favorite (just ahead of almonds). And they are so good with dark chocolate!
Did you know that pecans contain more antioxidants than other nuts? Yes, almost as much as semi-sweet and other dark chocolate (see the ORAC table). Pecans, the only tree nut native to North America, has a similar taste to walnuts (but, of course, a little better, in my opinion). What a great combination dark chocolate and pecans make, and they taste so good together!
Baking and Cooking
Dark chocolate and pecans go really well in a chocolate pecan pie, dark fudge, and dark brownies. Find yourself a recipe you really like, and you may never eat anything else! You can buy some really great fudge from many sources, but I usually don't go for "bought" brownies. How can you beat home-made brownies? Still, Lindt sells the Lindt Pecan Brownie with Lindt Excellence 70% dark chocolate glaze that is worth a try.
Dark Chocolate Covered Pecans, Bark and Clusters, and Turtles
Many on-line locations sell dark chocolate covered pecans, pecan clusters, and bark, including J. Michelle Chocolatier, who sells a dark pecan bark using Valrhona dark chocolate. A particular favorite type of cluster is the "turtle", which includes caramel. Many sugar-free varieties of bark and cluster are available.
Bars and Pieces
Many of the major manufacturers think that pecans go better with milk chocolate, as there are many of these available. Obviously, they never asked me. But there are a few great dark chocolate pecan bars, including:
