Among the strongest memories of my childhood is the variety of Easter chocolate I saw through the years. Growing up in the United States and in Europe, I saw all kinds of bunnies and eggs, both solid and hollow, and all kinds of other chocolates. I prefer dark chocolate now, and I wondered if I could do the entire Easter with only dark chocolate. The answer is "yes"!
Bunnies, Eggs, and Chicks?
The celebration of the arrival of springtime predates celebration of the christian holy day. During these springtime celebrations, the rabbit or hare represented fertility, and gifts of brightly colored and decorated eggs were often given as gifts. Chicks, like eggs, were also a symbol of fertility and new life.
In modern times, these symbols are often represented as candy treats, including chocolate Easter candy. Children and adults everywhere look forward to receiving chocolate bunnies for Easter, or maybe some chocolate eggs.

Every once in a while there was a big fancy egg in my Easter basket instead of a bunny. That was always something special.
